This research investigated whether gardening supplemented with nutritional curriculum could improve fruit and vegetable attitudes in minority children in Texas elementary schools. Children completed pre- and post-tests evaluating attitudes, snack preferences, and nutritional knowledge. Statistically significant positive differences were found in all three variables after the gardening and nutritional instruction.
