Urban Farm DB summary
A comprehensive review synthesized literature on the taxonomic diversity, cultivation practices, nutritional and phytochemical composition, health benefits, and postharvest management of microgreens. Microgreens possess significantly higher concentrations of vitamins, minerals, and antioxidants than their mature counterparts. For instance, radish microgreens contained 147 mg of vitamin C per 100g fresh weight, red amaranth microgreens offered up to 50 mg of iron, and sunflower microgreens provided around 65 mg of calcium.
