Davis school program supports life-long healthy eating habits in children

A study (2004, California Agriculture) evaluates the Farm to School Connection, a comprehensive program in the Davis, California school environment that sought to promote lifelong healthy eating habits in children and connect the school garden, cafeteria, and classroom to local agriculture, including farmers'-market-style salad bars, classroom education, farm tours, and waste management. Evaluated through interviews and surveys of program leaders, teachers, and school staff, the program was found to increase participation in the school lunch program following the addition of salad bars, and numerous partnerships developed among those involved; the components of the Farm to School Connection are presented as evidence supporting comprehensive school nutrition programs and their positive impact on the school environment.

Prison physical environments and social climates have been found to be physically and mentally stressful for inmates, and more than 70% of those in the California prison system return to prison within three years of parole. As part of an effort to reduce this recidivism, a rehabilitative gardening program was started at San Quentin State Prison, and this primarily qualitative study set out to determine the garden project's impact on the physical environment and social climate of a prison yard from both inmate and staff perspectives, through interviews with inmate program participants, an inmate control group, and prison staff conducted before and after the garden was planted. The evidence suggested that (a) gardens invited attention, use, and refuge; (b) being in or near a garden could reduce stress; (c) gardens might provide "neutral" territory in a segregated prison yard; (d) inmate participants gained benefits from directly working with nature; (e) gardens created the possibility for hope and further change; and (f) prison staff were generally more concerned about the impact of the change than the inmates themselves. Inmate and staff expectations about the garden's impact were met or exceeded, leading to recommendations to use the Garden Program to build collaboration, trust, and respect between inmates and staff through active staff participation in classes, to expand the program to other California prisons, and to have paroled inmates collaborate with local communities on community gardens. Limitations included a reduction in program scale during the planning stages and the short time elapsed between pre- and post-garden research; the authors suggest a longitudinal study to track impact on inmates after parole.

Urban and peri-urban agriculture (UPA) significantly contributes to food supply, employment, livelihoods, and poverty alleviation in many Sub-Saharan African cities, providing diverse foods including perishable items. However, UPA production often carries health risks from polluted urban water and faces challenges due to limited semi-official recognition and support from city authorities, sometimes conflicting with planners regarding land tenure and water use. More data is needed for appropriate recognition of this sector.

The California Healthy Cities and Communities (CHCC) program funded successful community gardens in several cities, which incorporated local leadership, volunteers, and skill-building. A 2003 study in Ibadan, Nigeria, investigated heavy metal contamination of Amaranthus cruentus L. grown on domestic refuse landfill soils. Lead (Pb) and Cadmium (Cd) concentrations in soils from four landfill sites and a control site ranged from 110.5 to 678.5ppm for Pb and 2.01 to 3.20ppm for Cd. Metal accumulation in Amaranthus cruentus L. tissues was proportionate to soil Pb concentrations, while Cd levels in crop tissues exceeded soil levels. Crop growth and yield were significantly reduced due to Pb and Cd contamination, leading to the conclusion that Ibadan landfills are unsafe for Amaranthus cruentus cultivation, with heavy metal concentrations in the vegetable tissues much higher than FAO/WHO dietary allowances.

Investigations in Newcastle upon Tyne, UK, analyzed the extent and consequences of disposing 2000 tons of incinerator ash on over forty allotments. Soil, egg, and vegetable samples (75 soil, 21 egg, 65 vegetable) revealed contamination of footpaths with dioxin/furan (max 9000 ng/kg I-TEQ) and high levels of copper, lead, and zinc. Mean dioxin/furan levels in soil were 38 ng/kg I-TEQ and in eggs were 16.4 ng/kg I-TEQ, indicating significant contamination and potential exposure pathways for allotment gardeners and children.

This comparative study evaluated the impact of school garden programs on nutrition knowledge among secondary school teachers in Kigali, Rwanda. A mixed-methods research strategy, including quantitative surveys (n=120) and qualitative interviews (n=6), was employed. Results showed an average improvement of 35% in teachers' nutrition knowledge post-intervention, indicating that school garden programs significantly enhance teachers' nutrition knowledge, correlating positively with improved academic performance among students.

This research in Dakar's slums used a mixed-methods approach to study the link between community gardens and educational outcomes among school children. A preliminary analysis indicated that students participating in community gardens showed a 15% improvement in reading comprehension scores compared to non-participants. While further statistical testing is needed, the findings suggest a positive correlation between urban agriculture and educational outcomes for low-income children.

This study measured heavy metal levels (cadmium, manganese, lead, and zinc) in Cynodon grasses near roads in Dar es Salaam City, Tanzania. Mean levels of lead and zinc varied exponentially with distance from the road up to 15m and correlated with average daily traffic, suggesting vehicular sources. For public health reasons, it is recommended that pasture grasses in road vicinities not be used for foraging dairy cattle and goats.

This study in Kumasi, Ghana, investigated the influence of urban wastewater on stream water quality and peri-urban agriculture through interviews and water quality assessments. It found that population increase and underinvestment in sanitation facilities led to large volumes of untreated wastewater entering streams. High levels of faecal coliform were recorded in the city's streams, downstream areas, and on vegetables sold in Kumasi’s markets due to contaminated wastewater.

This study aimed to formulate an integrated wastewater management model for Harare, Zimbabwe, integrating resource recovery and reuse in urban agriculture. Harare was divided into five major operational areas, and specific options were considered to suit land use, development constraints, and socio-economic status within the overall criteria of limiting nutrient inflows into Lake Chivero. Flexible and differential solutions were developed in relation to the built environment, population density, user composition, ownership, future environmental demands, and technical, environmental, hygienic, social, and organizational factors.

Among primary school students in Ghana, who have limited access to fresh fruits and vegetables, a mixed-methods study combining pre- and post-intervention surveys with focus group discussions (n = 300) assessed changes in nutritional knowledge and behavior following a school garden program. After the program, the proportion of students eating at least one fruit daily rose statistically significantly (p < .05) from a baseline of 20% to 45% post-intervention. The findings indicate school garden programs effectively improve nutrition-related behaviors among Ghanaian primary school students, suggesting a need for replication and expansion.

This approach can significantly contribute to food security and public health in a sustainable future.

Urban agriculture, despite severe competition for space, plays roles such as fresh food supply, leisure, supplementary income for the urban poor, and green space management. Case studies in Africa and Southeast Asia demonstrate the difficulty of maintaining these roles due to public health and environmental degradation concerns. Urban agricultural producers may rely on polluted streams for irrigation, cause soil erosion through inappropriate farming techniques, or poison surrounding residents with pesticides. The paper suggests that urban agriculture could be more beneficial to the urban system if treated by town planners as a normal urban function requiring both regulation and protection.
